1. Cook the udon noodles in boiling water for 2
minutes then drain well. Set aside.
Heat a wok on high and add 1/2 tablespoon of oil
when hot. Add chicken to wok, stirring
occassionally, until cooked through . Remove chicken
from the wok and set aside..
Add remaining oil and stir-fry cabbage, peppers and
broccoli for 2 to 3 minutes.
Add hoisin and soy sauces and return chicken to the
wok. Mix well then add noodles and stir-fry, tossing
quickly, to heat through. Serve!
