Boil chicken, cut up into pieces and set aside. Fry the bacon in a frying pan until crispy- crumble. Drain bacon drippings leaving 1 Tbsp. remaining in the pan. Saute the onion, garlic, and spinach in the bacon fat until cooked and onions turn clear.
Prepare the linguini according to package directions. Add the salt, pepper, nutmeg, milk, butter and cream cheese to the tring pan and cook until combined. Add the chicken and the bacon to the sauce. Mix together with the linguini. Serve with a side vegetable.
