Heat oil and add onion, garlic and potato. Cook
together for 5 minutes while bringing water to boil
in separate pot. Add chicken stock to water and let
melt. Add water and chicken stock to pot with
potato.
Add in the vegetables while still frozen. Let cook
for a few minutes and then add coconut milk (1/2
can. Then add curry powder, ginger, coriander and
salt.
Let cook until it thickens.
