3 to 3-1/2 lbs boneless beef pot roast (beef chuck roast)
1/2-3/4 baf of baby carrots
2 pounds medium potatoes, cut into 1 in pieces
2 envelopes Lipton Onion Soup mix
3/4 cups water
Instructions
In a large nonstick skillet, heat oil over medium-high heat and brown roast.
In crock pot, arrange carrots and potatoes. Top wirh roast.
In glass measuring cup, combine onion soup mix, with water. Add to skillet, scraping up any brown bits from bottom of pan. Add soup mix to crock pot.
Cook covered on low for 8-10 hours or high 4-6 hours. (To thicken gravy, combine 1/4 cup water with 2 tbsp flour. Cook on high 15 min or until thickened.)
