preheat oven to 450
prep asparagus- cut tough ends, peel bottoms if needed
cut to make 5-6 inch spears
lay out 1 sheet phyllo and spray with non-stick cooking spray
sprinkle with 1 T cheese
place 2nd sheet of phyllo on top of cheese and press to seal together
cut crosswise to form 2 rectangles
place 1 asparagus on 1 rectangle leaving out the tip of the flower
fold bottom of phyllo over spear, and roll tightly
continue with all
place asparagus seam side down on baking sheet, tips toward the center
lightly spray with cooking spray
bake 8-10 minutes, or until golden brown
combine chopped red peppers, 1 t of lemon zest, 2 T lemon juice, parsley, mayo, Italian seasoning, pepper, and garlic to make Aioli
