1 pound green (unripe) papaya (from asian market- ask for the green papaya you use in salad)
2 thai chilis, seeded and finely chopped
1 small clove garlic, minced
6 string beans, trimmed and sliced diagonally into 1 inch pieces
5 cherry tomatoes, cut into halves (or cut up 1/2 a roma tomato)
1 1/2 tablespoons palm sugar or white sugar
1 tablespoon fish sauce, Tiparos brand best
2 tablespoons fresh lime juice
1 tablespoon chopped roasted peanuts
1 teaspoon finely chopped dried shrimp if desired (from asian market)
Cilantro leaves and peanuts for garnish
Instructions
Peel and seed green papaya and shred in a food processor to make 3 cups.
Put chilis, garlic, beans and tomatoes into a wooden bowl. Crush slightly with a muddler or wooden spoon. Add the next 5 ingredients and crush lightly together.
Fold in the shredded papaya. Adjust seasoning as desired with sugar, lime juice, and chili peppers.
Garnish with peanuts and cilantro. Serve immediately.
