Sauté onion and mushrooms in fat until tender but not browned.
Add broken matzos and toast lightly. Combine salt, pepper,
paprika, egg, and soup. Add to matzo mixture. Lightly fill body
cavities with stuffing. Close openings with skewers. Brush
liberally with chicken fat or oil. Roast uncovered in a hot (425-
degree) oven, brushing occasionally with additional fat, for 1
hour, or until tender.
