1 cup chicken broth

1 cup quick brown rice
|

3 tablespoons butter
|

1/4 teaspoon onion powder
|

1/4 teaspoon minced garlic

1 cup corn
|

2 eggs, beaten

1/2 red pepper
|
|
chopped parsley
|

Instructions |
|
|
Bring chicken broth to boil. Add rice and cook according to recipe
on the box.
|

|
In a separate skillet, melt butter. Saute red peppers. Mix in onion
powder and minced garlic. Cook for around 10 minutes.
|

Add corn, parsley, and pecans. Cook for another couple of minutes.
Add eggs and cook until done.
|

|
Once eggs and rice are done, add rice to the skillet. Serve warm
|
