Sprinkle brisket evenly with salt and pepper. Heat a large dutch oven over medium heat-high heat. Coat pan with cooking spray, add brisket and cook 10 minutes, browning all sides. Remove brisket from pan.
Add onion and oregano to pan and saute 3-4 minutes. Return brisket to pan; add 1/2 cup water. Cover, redice heat, and simmer 2 hours. Add olives and tomatoes; cover and cook 1 hour. Remove brisket from pan.
Let meat stand 5-10 minutes, cut against the grain into thin slices; return brisket to pan, cover and cook 30 minutes.
Yield 6 servings, about 5 ounces of brisket and 1/3 cup saucer per serving.
