Cut the pork loin into 4 equil pieces. Place each piece betweeen 2 sheets of plastic wrap and pound out to 1 inch thick.
Mix together bread crumbs and parmesan cheese,1/2 teaspoon salt and 1/4 teaspoon pepper. Set Aside
In a second bowl beat together egg and water. In a third bowl, mix together flour and remaining salt and pepper.
Heat oil and butter in skillet to medium-high. Dipe each piece of pork in flour,then egg then breadcrumbs. Cook the pork until done about 3-5 minutes on each side. Remove and drain on paper towels. Serve with lemon wedges.
