Instructions
In a large pot over high heat, add the turkey carcus and cover
one inch over. Add the thyme, bay leaves, 1 chopped carrot and
celery and a big pinch of salt and bring to a boil. Reduce the heat
to simmer 1/ 1/2 to 3 hours , skimming any scum that rises to
the surface. Remove the carcus from pot. When it is cool
enough to handle, shred any meat leftover and discard the skin
and bones. Strain the broth.
Wipe out the pot, put it over medium-high heat, and add oil.
When hot, add the onions, remaining celery, carrot, and parsnip
or whatever else u want, season with salt and pepper, and cook
until softened, 7 to 8 minutes. Add the garlic and cook for
another minute. Add the turkey broth and sage and bring to a
simmer. Add the meat to the pot and let it simmer to warm
through, about 10 minutes. Remove from the heat and stir in the
parsley just before serving.
