Mix the cream cheese and ranch dressing together...it will appear runny
|

Finely chop the carrots, green pepper and green onion and add veggies in slowly with the cream cheese and ranch dressing. Continue adding veggies until the mixture appears chunky..but not too thick.

Add in the shredded cheese to thicken - about 1 cup..but you can add more if it looks like you need to thicken up the mixture a little

Spread mixture on tortilla shell..not too thinly but not real thick either and then jelly roll the tortillas and place in a container to refrigerate overnight. Slice about 1 inch think the next day and serve.
