Cook pasta and reserve some pasta water. In skillet add 2 T EVOO and cook ham until brown. Then add mushrooms and cook until soft. Add spinach and cook until wilted.
In a food processor mince garlic, walnuts, parsley, and lemon peel until finely chopped. Then add lemon juice, 1/4 C EVOO, S&P.
Combine pasta, ham mixture, and pesto. Add reserved pasta water as needed.

Suggestions
Add more spinach, more meat, onions.
