1 (16 ounce) package turkey kielbasa, cut diagonally into 1/4 inch slices
1 onion, chopped
1 green bell pepper, chopped
4 cloves chopped garlic
1 cup small red beans
1 can (16 ounce) diced tomatoes
1/2 tsp. dried oregano
1/2 tsp. salt
1/2 tsp pepper
1/2 tsp. cajan seasoning
Instructions
In a saucepan, bring 1 cup of water to a boil. Add rice and stir.
Reduce heat, cover and simmer for 20 minutes.
In a large skillet over low heat, cook sausage for 5 minutes. Remove
sausage and set aside. Stir in onion, green pepper and garlic; saute
until tender. Pour in tomatoes with juice and 1 cup of water. Season
with oregano, salt and pepper. Simmer uncovered for 30 minutes.
Put beans in pressure cooker and cover with water. Cook on high
until pressure is reached and then reduce to medium heat. Cook
for 25 minutes.
Remove beans from pressure cooker and mix all the ingredients
together. Simmer for another 15 minutes. Serve over rice. Enjoy!
