1 clove garlic, minced
|
|
1 large onion, chopped
|

1 large tomatillo, chopped
|
|
1 small jalapeno, cored and minced
|
|
1 14.5 oz can fire roasted tomatoes, diced
|
|
2 C cooked whole hominy, or a 15.5 oz can drained hominy
|
|
1 can pinto beans, drained and rinsed
|
|
1 pound skinless boneless chicken breast cut into bite-sized chunks
|
|
|
|
1/4 t dried cumin
|
|
1/2 t dried oregano, crushed
|
|
1/4 t salt
|
|
1/4 t pepper
|
|
1 C fat-free chicken broth
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
1- Coat a large nonstick skillet with cooking spray. Add garlic,
onion, tomatillo and jalapeno. Saute for 5 minutes, stirring
frequently.

2- Stir in canned tomatoes, hominy, beans, chicken, cumin,
oregano, pepper, salt and broth
|
|
|
3- Cover skillet and simmer until chicken is cooked through,a bout
20 minutes. Yields about 1 3/4 Cup per serving
|
|
|
If a tomatillo isn't available, substitute a red tomato and teaspoon
fo fresh lemon juice in its place.
