Combine the flours in a large bowl. Make a well in the middle and add the eggs and yolks. Mix the flour and eggs slowly, adding a little flour to the egg well at a time. As ingredients thicken, use your hands to combine into a ball.
Knead the dough for about 8 min. or until it is smooth. It should not stick to your finger if pressed in the middle, otherwise keep kneading. Cover with plastic wrap and let rest for 2 hours. Divide into 8 rectangle pieces.
Flatten a piece and feed through the pasta rollers on the widest setting. Fold in half and repeat 3 times, reducing the roller setting each time. Once each is flattened, cut with pasta roller or form into spagetti, ravioli, pappardelle, or lasagne.
